Artisan Bread

Yield: 1 Loaf

Ingredients

  • 1½ C Water, warm
  • 1 T Yeast
  • 2 C High Gluten Flour
  • 1 C Flour
  • 1 T Salt

Olives, garlic, chocolate chips, sprinkles

  • 1 C Add-ins of choice

Instructions

    Mix ingredients to sticky dough — slowly add last ½ C flour until sticky but manageable.

    Rise 1 hour to double.

  3. 3

    Drizzle olive oil, add half add-ins if using, stretch and fold.

  4. 4

    Rise 1 hour.

    Cover 20-30 minutes, add rest of add-ins, stretch and fold.

    Rise 40-60 minutes to double.

    Preheat oven to 450 with dutch oven inside.

    Place dough on floured surface, shape into round loaf.

    Place on parchment, score.

    Bake covered 30 minutes, uncovered 10-15 minutes.

    If bottom isn't crispy, place straight on rack 3-5 minutes.

    With chocolate: covered 40 minutes, uncovered 5-10 minutes.

    Cool 30 minutes before slicing.
