Babka

Yield: 5 Babkas

Ingredients

Recipe

  • 1¾ C Apple Juice or Water, warm
  • 2 oz Yeast
  • ¾ C Sugar
  • 1-1½ C Margarine, softened
  • 3 Eggs
  • 7 C Flour
  • 2 t Salt

Filling

  • 1½ C Cocoa
  • ¾ C Sugar
  • ¾ C Confectioners Sugar
  • 2 t Cinnamon
  • 2 T Coffee

Filling — start with ⅓ C

  • Oil

Crumbs

  • 1 C Flour
  • 1 C Sugar
  • ½ C Oil

Instructions

    Dough: combine liquid, yeast, sugar, sit 10 minutes.

    Mix in margarine (1 C for less fatty), eggs.

    Add flour and salt, knead till smooth and bouncy, adding flour as needed.

    Cover, rise 1-2 hours.

    Filling: combine ingredients, add oil till thick spreadable paste.

    Divide dough in 5.

    For each: roll into rectangle, spread filling, roll tightly from long side.

    Cut in half lengthwise, create X, twist both ends, place in lined big loaf pan (or twist into circle in round pan).

    Repeat.

    Beat 1 egg with ½ T water, brush.

    For crumbs: combine by hand to crumb consistency, sprinkle generously.

    Bake on 350 for 40-50 minutes until golden brown.

Note

No crumbs? Make simple syrup (1:1 sugar:water boil), pour over straight from oven.
