Carrot Cake

Yield: 7x10 or 8" round

Ingredients

Recipe

  • 1¼ C Flour
  • ¾ C Sugar
  • ½ t Baking Powder
  • ½ t Baking Soda
  • ¾ t Cinnamon
  • ¾ C Oil
  • 2 T Orange Juice
  • 2 Eggs
  • ½ lb Carrots, shredded
  • ½ C Chopped Pecans or Walnuts
  • Coconut, optional sprinkling

Frosting

  • 4-6 oz Cream Cheese
  • 1 t Vanilla Extract
  • ½ C Powdered Sugar
  • 1-3 T Milk

Instructions

    Shred carrots, set aside.

    Combine first 5 by spoon, mix in wet ingredients.

  3. 3

    Fold in carrots and nuts.

  4. 4

    Pour into lined pan.

  5. 5

    Bake on 350 for 40-60 minutes.

    Frosting: beat ingredients with milk to desired consistency (4 oz for top only, 6 oz if filling between halves).

    Cool and frost.
