Cranberry Orange Muffins

Yield: 8 Big

Ingredients

Recipe

  • 1 C Sugar
  • ¼ C Brown Sugar
  • ¼ C Oil
  • ¼ C Apple Sauce
  • 2 Eggs
  • 1 T Vanilla
  • 2 T Orange Zest
  • 1¾ C Flour
  • 1 T Baking Powder
  • ½ C Almond Milk
  • 1½ C Cranberries

Crumbs

  • ½ C Flour
  • ⅓ C Sugar
  • 4-5 T Margarine or Oil
  • Orange Zest

Glaze

  • Cranberries cooked down
  • Powdered Sugar
  • Almond Milk

Instructions

    For crumbs: combine dry, add margarine, crumb.

    Chill.

    For muffin: combine first 4, mix in eggs, vanilla, zest.

    Mix in flour, baking powder, then almond milk.

    Fold in cranberries.

    Line tins, fill, top with crumbs.

    Place on sheet.

    Bake on 375 for 22-30 minutes until clean.

    For glaze: mash cooked cranberries, remove big peels, add powdered sugar and almond milk to desired consistency.

    Cool, then glaze.
