Donuts

Yield: 20 (or 40-60 munchkins)

Ingredients

  • 4 C Flour
  • ¼ C Sugar
  • 2¼ t Dry Yeast
  • 2 Eggs
  • 1¼ C Water, warm
  • ½ t Salt
  • ¼ C Margarine, room temp
  • Oil for frying

Instructions

    Mix flour, sugar, yeast in large bowl.

    Add eggs, water and salt, mix combined.

  3. 3

    Add margarine, knead till incorporated (slightly stickier dough = fluffier donut).

    Cover, rise 2 hours.

    Cut parchment squares for each donut.

    Divide dough into 20 balls, place each on parchment.

    Cover, rise 45 minutes.

    Heat big pot of oil.

    Place 3-4 donuts in with parchment squares — remove parchment when it detaches.

    Flip with slotted spoon when golden.

    Drain on paper towel-lined sheet.

    Cool, fill, glaze and top.

Note

Fillings: custard, lemon curd, homemade jam, jam+custard, cream cheese frosting, pumpkin whipped cream, apple pie filling, marshmallow filling, peanut butter, tiramisu, whipped chocolate ganache. Glazes: chocolate, vanilla, blueberry, cranberry, coffee, coconut lime, peppermint, peanut butter. Toppings: sprinkles, crushed graham crackers, crushed peppermint candies, coconut, chopped nuts, torched marshmallows/fluff.
