Dragon Fruit Berry Muffins

Yield: 6 Jumbo

Ingredients

Recipe

  • ¼ C Melted Coconut Oil or Margarine
  • 2 T Oil
  • ½ C Sugar
  • 1 t Vanilla
  • 1 Egg
  • 1½ C Flour
  • ½ T Baking Powder
  • ½ t Baking Soda
  • ½ C mix Almond Milk and Dragon Fruit juice

Crumbs

  • ¼ C Flour
  • ¼ C Sugar
  • 2-3 T Margarine or Oil

Filling

  • Red Dragon Fruit
  • Strawberries
  • Raspberries, optional
  • Lemon Juice
  • Sugar

Glaze

  • Powdered Sugar
  • Reserved Filling Juice
  • Lemon Juice

Instructions

    Crumbs: combine dry, add margarine, crumb.

    Chill.

    Filling: add to pot, bring to boil, lower to medium, cook to jam consistency; reserve some juice for glaze before thickening.

    Chill.

    Muffin: combine first 4, add egg.

    Mix in dry, then almond milk and juice.

    Line tins, pour 2 T batter, generous filling.

    Cover with batter, top with crumbs.

    Place on sheet.

    Bake on 375 for 18-25 minutes until clean.

    Combine glaze.

    Cool, then glaze.
