Eggplant Carpaccio

  • Eggplant
  • Olive Oil
  • Lemon Juice
  • Salt
  • Fresh Parsley

Option 1

  • Tomatoes

Option 2

  • Tahini
  • Silan
  • Pomegranate Seeds

Instructions

    Poke eggplant all over with fork, place on foil-lined sheet.

  2. 2

    Broil — start with 30 minutes till inside fully soft and mushy.

  3. 3

    Cool, scoop flesh, mash with olive oil, lemon juice and salt until smooth (almost no strings).

    Transfer to big flat plate, flatten.

  5. 5

    OPTION 1: chop tomatoes and parsley, mix with olive oil and salt, place all over eggplant.

    OPTION 2: drizzle tahini and silan all over eggplant, sprinkle pomegranate seeds and parsley.

Note

To prep ahead: mash eggplant with flavoring, fridge; top before serving.
