Focaccia

Yield: 20

Ingredients

  • 1 C Water, warm
  • 3 t Dry Yeast
  • 2½ T Honey
  • 2 T Olive Oil
  • 2 T Corn Meal
  • 2½ C High Gluten Flour
  • ½ t Salt
  • Toppings: olives, tomatoes, rosemary, preserved lemon...

Instructions

    Combine water, yeast and ½ T honey.

    Sit 10 minutes till active.

    Mix in rest of honey, olive oil, cornmeal.

  4. 4

    Add 2 C flour and salt, knead till soft (slightly sticky).

    Rise in greased bowl 1 hour till doubled.

    Transfer to oiled baking sheet, sit 15 minutes.

    Pull dough nearly to edges, rise 20 minutes.

    Drizzle with oil, sprinkle salt.

    Dimple with fingers, top.

    Bake on 375 for 20 minutes until golden.

Note

Optional loaf: after first rise, shape into loaf in oiled big loaf pan, rise 30 minutes, bake on 375 for 25-35 minutes.
