Lemon Poppy Muffins

- 1¼ C Sugar
- Zest of 2 Lemons
- ¾ C Oil
- 2 Eggs
- 2 C Flour
- 1 T Baking Powder
- ½ t Baking Soda
- ¾ C Almond Milk
- 3 T Lemon Juice
- 2 T Poppy Seeds
Crumbs
- 1 C Flour
- ⅔ C Sugar
- Zest of 2 Lemons
- ½ C Margarine or Oil
Glaze
- Powdered Sugar
- Lemon Juice
- Poppy Seeds
Instructions

Crumbs: combine dry, add margarine, crumb.

Chill.

Muffin: combine sugar and zest, add oil and eggs, mix.

Mix in half flour/baking powder/soda, then half almond milk.

Add rest of dry, then rest of almond milk and lemon juice.

Mix in poppy seeds.

Line tins, fill, top with crumbs.

Place on sheet.

Bake on 375 for 20-25 minutes until clean.

Combine glaze.

Cool, then glaze.
