Mom's Cranberry Muffins

Ingredients

Recipe

  • 2 C Flour
  • ½ C Sugar
  • 2 t Baking Powder
  • ½ t Baking Soda
  • 1 C Plain Yogurt
  • 1 Egg
  • ½ C Margarine, melted or Oil

Crumbs

  • ¼ C Pecans, chopped and roasted
  • ½ C Flour
  • 2 T Sugar
  • 2 T Brown Sugar
  • ¼ t Baking Powder
  • 2½ T Margarine or Oil

Prep

  • ½ C Cranberries, frozen
  • 1½ T Sugar

Glaze

  • 1 C Powdered Sugar
  • 1½ T Milk

Instructions

    Crumbs: combine dry, add margarine, mix to crumby.

    Chill.

    Cranberry prep: mix cranberries and sugar; set aside.

    Muffin: combine dry, add wet and mix.

  5. 5

    Fold cranberry sugar mixture in.

  6. 6

    Line tins, fill, top with crumbs.

    Bake on 425 for 18-20 minutes until clean.

    Combine glaze (powdered sugar + milk).

  9. 9

    Cool, then glaze.
